Tarragon’s new/old concept that all dishes are prepared from locally sourced ingredients, aside from giving back to the local community, having ingredients so readily available, means not having to order in bulk and ensures each dish is as fresh and flavoursome as possible. This ensures a unique dining experience with a ‘field to fork’ approach using locally-sourced ingredients for the lightest eco-footprint possible. ‘Old’ because Tarragon has always endeavoured to focus on sourcing local, but also ‘new’ because they are now renewing their commitment to try to further include more and more ingredients without resorting to venturing beyond our shores.
Using the freshest catches from the Mediterranean, locally-grown farm animals and seasonal produce wherever possible, Tarragon’s ingredients are as close to zero-kilometre as you can get.
Guided by Chef Patron Marvin and his unerring instinct for bringing together ingredients that create the most delectable flavours, Tarragon worked on a menu that turns the concept of fine dining into something truly special.
Whichever the main ingredients they are working with – the tenderest meats, succulent fish, delicate poultry, flavourful veg, a light dessert – the end result is one that will surprise the tastebuds into pure pleasure.
