Firm Gozitan asparagus are tossed in butter and almonds and the neonati, lemon, parsley, pecorino and chilli fritters are served with a delightful salsa verde. The local rabbit cooked with onions, garlic, port and chocolate is a testament to the rich knowledge of complimentary combinations offered. Roast rump of lamb served with hummus and lebneh and a coriander and lime dressing demonstrate the confidence of including refined international dishes with traditional fare such as seasonal fresh fish and choice cuts of beef. For dessert, the malt chocolate parfait served with honeycomb is sublime. A fine wine and whisky selection is also available.
