After dining at 59 Republic you soon realise that this dining experience is not just about great food but impressive attention to detail. The interior gives you an international flavour with style and comfort, teamed with beautiful linens and crystal this place sets out to impress. Whilst the atmosphere may be
deemed “casual fine dining” the service staff quickly have you relaxed and at ease with a pleasant welcome.
Maria Sammut, executive chef and co-owner of 59 brings you a menu that is bursting with flavour aimed to tantalise. The menu is changed every few months to meet seasonal flavours and Maria always introduces daily specials. Some favourites include the signature Beef Wellington coated in a mushroom duxelle, wrapped in Parma ham and puff pastry, then baked to your liking. Champagne battered prawns, chicken consommé with home-made chicken dumplings, Scottish scallops & steak tartare are just a few others. With mains, there is always plenty of fish and meat dishes that can be perfectly complemented with sides of mac and cheese, French beans with pancetta, garlic & chive mashed potato or sweet potato fries. A small but refined international wine list including nine different champagnes is available with all top-level spirits. This intimate space is very popular and booking is advised with the menu available online. The mantra for 59 is “food served with passion, creativity & love” and nothing could be truer.
