Situated just steps away from the Grandmasters Palace Square, located in the stunning vibrant capital city Valletta, 59 Republic has been launched to huge praise and glowing reviews!

Brimming with creativity and a passion for food, executive chef and co-owner, Maria Sammut has been cooking with love for the past 15 years. Focusing on fresh seasonal produce with a French classical infusion and innovative flavours, 59 Republic was launched almost 2 months ago.

 

With an interior and ambiance that is fresh, chic and totally comfortable, 59 Republic has become a firm Valletta favourite with many returning clientele and great reviews on social media.

 

Classical dishes have proved to be a huge hit with the signature Beef Wellington dish being a smash. Others include seared Scottish scallops with garden pea and porchetta soup, strozzapreti pasta with a 12-hour braised pork cheek ragu, rack of lamb smothered in whole grain mustard pistachio herb crust, carrot and cardamom puree and some fabulous desserts including baked Alaska and a hugely popular white chocolate fondant.

 

Bookings are advised well in advance particularly for weekends and 59 Republic is open daily for lunch from 12.30pm and for dinner from Monday to Saturday from 6.30pm.
