At the start, the amuse-bouche (‘mouth amuser’) gives one a glimpse into the culinary art of up-and-coming chef David Vella. Start with a chilled, charred watermelon and beetroot soup, an aged parmesan panna cotta with air-dried parma ham and grilled cantaloupe, or pasta stuffed with aubergine, and you’re still at the meal’s vernissage! The mains include fresh line-caught fish, sirloin beef, grilled octopus, and strozzepreti pasta with king prawns, calamari, and preserved lemons.
